1.What made you take on your role at Bar Douro and what do you love most about it?
Bar Douro was a passion project for me. For the first time in my career, I could cook dishes that held personal significance. It was not only food from my upbringing but also an integral part of my identity, allowing me to introduce a cuisine I hold dear which remained somewhat undiscovered in London.
2. Who or what has influenced your cooking style the most?
During my early years as a chef, I worked with several culinary masters who taught me the importance of product quality and the essence of allowing it to shine rather than disguise it. Portuguese culinary tradition exemplifies this principle perfectly.
3. Your biggest achievement to date is...
My most significant achievement is leaving Portugal and carving out a successful career in a city like London. I've advanced through every position with immense dedication and a constant willingness to learn from each stage. As a result, I've become someone my team respects and looks up to as an example of potential success.
4. Which ingredient can't you live without?
High-quality olive oil. It's indispensable for both creating and finishing dishes.
5. When you're not busy cooking and have down time where can we find you drinking and dining?
I relish discovering different cuisines while travelling. It's the best time to encounter new ingredients, techniques, and flavours.
