1.What made you take on your role at Mirabello Bay Luxury Resort and what do you love most about it?

I’ve always harboured a passion for hospitality and crafting memorable experiences for people. When this opportunity arose, I was positively thrilled, given the restaurant's stellar reputation for quality cuisine. What I adore most is the camaraderie and dynamic energy of the restaurant. Each day is a new adventure, and I relish making guests feel genuinely welcome.

2. Who or what has influenced your cooking style the most?

One of my greatest influences is Tom Aikens, alongside Nobu Matsuhisha, with whom I had the privilege of working. They imparted to me the crucial art of balancing flavours and showing reverence for ingredients. My travels around the globe have further enlightened me to the magic of simple, high-quality ingredients.

3. Your biggest achievement to date is...

Among my proudest accomplishments is leading a successful career in the hospitality industry. Winning awards and receiving recognition, as well as working with Michelin-starred chefs, are highlights.

4. Which ingredient can't you live without?

I must confess, I have a particular fondness for leeks; they are my favourite vegetable.

5. When you're not busy cooking and have down time where can we find you drinking and dining?

My favourite spot is a table by the sea, with delightful company, savouring local meze and wine.
